Blueberry Chocolate Chip Muffins


I thought making the perfect blueberry muffins would be the toughest dessert to make. I was wrong and I am really impressed how it turned out the first try! I would absolutely make it again and my friends and family really love these blueberry chocolate chip muffins and I hope you do as well.

Ingredients needed:


  • 1/2 cup of milk
  • 1 1/2 tsp white vinegar
  • 1 3/4 cups of all-purpose flour 
  • 3/4 cup of white sugar
  • 1/2 teaspoon of salt
  • 2 teaspoons of baking powder
  • 1 cup of fresh blueberries
  • 6 tablespoons of vegetable oil
  • 1 large egg 
  • 1 teaspoon of vanilla extract 
  • 1 cup of chocolate chips (or as much as you want)
Instructions:
  • In a small bowl or in a large mug combine milk and vinegar and put it aside. (buttermilk substitution) 
  • In a large bowl add and mix flour, sugar, salt and baking powder. Then add blueberries and chocolate chips and toss and coat them, so the blueberries and chocolate chips don't sink to the bottom, when liquid ingredients are added.
  • Add the mixture of milk and vinegar, oil, beaten egg, and vanilla extract.  
  • Mix very gently, just until everything in properly incorporated and until you cannot see anymore dry ingredients (NO OVER MIXING) and leave it aside for 15 minutes. 
Baking:
- For your oven, grease your muffin tin, and equally add batter to 8 muffin spots. Add to oven at preheated 450*F for 10 minutes, then reduce to 350*F and let it bake for an extra 10 to 12 minutes. Let it cool and serve!
-For cupcake tins, bake at 450*F for 5 minutes and then, reduce heat and let bake for an extra 4-6 minutes. Which will make 20-24 mini muffins.
